Figs pair beautifully with peppery rocket, creamy feta and some toasted nuts for added crunch. Alongside a glass of Sauvignon Blanc, it makes a simple yet delicious combination. Serves ~6 as a side dish.
~4 cups fresh rocket leaves
4 fresh figs, sliced
1/2 cup feta, crumbled
1/3 cup toasted almonds (or use walnuts), roughly chopped
½ avocado, cut into cubes
3 Tbspn extra virgin olive oil
Juice of 1 lemon
Coarse sea salt
Freshly ground black pepper
Combine the dressing ingredients in a small jar with a lid. Shake until well combined.
Place the rocket onto a serving platter and scatter over the figs, feta, almonds and avocado. Drizzle over the dressing just before serving.
