Chocolate + Fig Smoko Cake
When it's our fresh harvest season, we have so many figs available for our great little harvest team to enjoy and take home at the end of each day if they wish.
I also try to bake with figs when I can to keep everyone fueled. It's also a great reason to all try and stop at the same time to enjoy some figgy-baked goodness! AKA smoko.
Here is the recipe for a simple yet delicious Chocolate Cake topped with freshly sliced figs for sweetness and prettiness...because we all know that a sliced fresh fig is one of the prettiest things around!
Chocolate + Fig Smoko Cake
Serves ~8
We swear by this Ultimate Chocolate Cake recipe by Annabel Langbein. We normally replace the self-raising flour with a gluten-free alternative to for the Coeliac's in the team so we can attest to the fact this cake works brilliantly as a gluten-free option also!
As an icing we make a simple chocolate mascarpone by simply mixing the following in a bowl:
- 250g Mascarpone cheese
- 3-4 Tbspn pure maple syrup (can add more to taste if you wish)
- 2 Tbspn sifted cocoa powder
Once the cake is cooked and cooled, place it onto your serving plate and top generously with the chocolate mascarpone icing.
Then simply slice 2-4 fresh figs (depending on their size) and place gently on top of the cake around the edge in a ring format.
